Enjoy Italian food at Shangri-La Hotel, SZ
    2014-11-21  08:53    Shenzhen Daily

SHANGRI-LA Hotel, Shenzhen is presenting three Italian set menus with classic ingredients prepared by new executive chef Salvatore Coco at 360° Bar, Restaurant and Lounge on the hotel’s 31st to 32nd floors.

Guests can immerse themselves in the romantic atmosphere at 360° Bar, Restaurant and Lounge, savor traditional Italian cuisine and enjoy the majestic views of Hong Kong’s New Territory and the city’s skyline.

The delightful starters include quail breast salad with raspberry vinegar, mille-feuille of calvados enhanced with foie gras, marinated raw tuna with veal mousse and capers and more.

The main course choices are roasted loin of lamb with Sicilian gremolata, red onion fondant and cannellini beans, traditional ossobuco with saffron risotto and gremolata. Other classic Italian dishes are porcini mushroom-enhanced tagliolini with lobster, carrot and parmesan foam, homemade candy-shaped noodles with ricotta cheese, bacon, shrimp and carnaroli rice with lobster, scallops, prawns, crab, Prosecco wine and asparagus.

A variety of desserts is also available, such as chocolate “warm-caprese,” almond and chili accompanied by fruit ice cream, “express” mille-feuille with Chantilly of VOV, caramelized apples and a cinnamon vin cotto reduction.

Spanning over 25 years, chef Coco’s career has taken him to Italy, Dubai, Austria, Moscow, Malaysia, Cairo, Doha and Abu Dhabi, where he has served at many five-star hotels. Coco specializes in novel techniques to remodel classic dishes and ingredients. His dishes are always magically full of surprises, making even simple classics mysterious and something diners will never forget.

The Italian set is available at 488 yuan (US$79.5) per person, subject to a 15-percent service charge.
