Black winter truffle magic at Belle-Vue

GRAND Hyatt Shenzhen’s Belle-Vue restaurant celebrates the magical allure of black winter truffles. Guests can fall under the spell of this precious ingredient as chef de cuisine Marc Briol unearths its rich flavors and luxurious aroma with a seasonal menu of inspired creations.

The menu showcases black truffle dishes prepared with Briol’s signature style of updating classics through playful flavor pairings, textural contrasts and modern presentations. Highlights include sautéed Boston lobster, served with green asparagus, lobster reduction and chervil, topped with shaved black winter truffles, and handmade black truffle tortellini served with scamorza cheese, chestnuts and freshly shaved black winter truffles. Briol also conjures sweet surprises with two dessert selections featuring black truffles.

The dishes on the seasonal black truffle menu can be ordered individually and are offered alongside the full à la carte menu.
