Hotel to have culinary week with guest chef

    THE Ritz-Carlton, Shenzhen is set to welcome guest chef Reimund Brunner for an exclusive culinary week from Wednesday to Saturday.

    Head of Michelin one-star restaurant Anna Stuben, in Italy’s northernmost province of Trentino, chef Brunner will showcase his modern take on traditional Italian cuisine, alongside Stefano Nicodemo, chef de cuisine of Paletto, through a specially designed “Quattro Mani” menu at Shenzhen’s most exclusive dining venue.

    Brunner has been the chef at Anna Stuben since 2011. The 37-year-old South Tyrolean acquired experience in prestigious restaurants with famous chefs in Italy and abroad, including Horst Petermann at Petermann’s Kunststuben near Zurich, Hans Haas at Tantris in Munich and Herbert Hinter at Rose in Appiano.

    Brunner is fully aware of the responsibility that rests on his shoulders, so he is constantly seeking and reutilizing forgotten products and ingredients, reinterpreting them with great creative flair.

    While Brunner’s light, simple and linear cuisine, with its immediately recognizable ingredients, is deeply rooted in local traditions, his culinary creations are never commonplace as his main objective is to convey direct and intense gastronomic sensations to his guests.

    Brunner will stage his food lab at Paletto, where his unique approach to food is demonstrated through his dinner menus with Nicodemo.

    Notable dishes from the menus include lobster, sea urchin and apple compote; Osso Buco Tortellini with Castelmagno cheese, citrus and licorice; and Manzo tartare with polenta; and radish and apple with blueberries and walnuts.(SD News)
