Hotels present tea-inspired culinary journey

    IN celebration of spring and the 4,000-year-old tradition of Chinese tea culture, Shangri-La’s five selected hotels will present a tea-inspired culinary experience in five destinations — Hangzhou, Nanjing, Xi’an, Chengdu and Shanghai.

    Participating hotels in each destination include Shangri-La hotels in Hangzhou, Nanjing, Xi’an, Chengdu, and west Shanghai.

    The hotels’ Chinese executive chefs will be presenting their interpretation of spring, marrying the flavors of Chinese tea with their provincial Chinese cuisine, using only the freshest seasonal produce. Each hotel’s menu is designed to showcase the uniqueness of each destination.

    The menu also features Shangri-La’s spring tea as recommended by the Shangri-La group’s professional tea sommelier. Promotional menus are available through May 31.

    Chinese tea has a history of more than 4,700 years. It is the country’s national beverage. The best Chinese tea is harvested based on the best time to consume the tea leaves.

    There are numerous varieties of Chinese tea to choose from: Yuhua tea from Nanjing, Biluochun from Suzhou, Longjing from Hangzhou, Zhuyeqing from Chengdu, Babao tea from Xi’an, oolong from Fujian, and more.

    Signature dishes from participating hotels are West Lake Longjing shrimp from Midtown Shangri-La, Hangzhou, aged Pu’er tea stewed pork ribs from Shangri-La Hotel, Nanjing, baked Hanjiang fish with Tieguanyin from Shangri-La Hotel, Xi’an, green tea braised pork trotter from Shangri-La Hotel, Chengdu, and baked chicken with Maofeng tea from Jing’an Shangri-La, West Shanghai.

    At Jing’an Shangri-La, West Shanghai, Summer Palace Chinese Restaurant, Chinese executive chef David Liu has designed a Cantonese cuisine centric Chinese tea-inspired a la carte menu — steamed Australian lobster with rice wine and Tieguanyin tea, double-boiled abalone soup with caterpillar mushroom flower and Pu’er tea, baked chicken with Tieguanyin tea and more.

    “Chinese people love tea and the rich tea culture, it showcases the Chinese hospitality, which is the way we treat people,” said Marco Vazzoler, general manager of Jing’an Shangri-La, West Shanghai. “The five sets of tea-inspired menus represent the five destinations’ gourmet cultures.”
