NORTH Indian food is what many people think of when they hear the words “Indian cuisine.” However, in India, there are actually many different types of regional foods, as is also the case in China. The food most known from India worldwide is in fact north Indian.

Not satisfied with the standards for Indian food offered in Shenzhen, Indian cousins Gurpreet Singh Bahri and Guraman Singh Bahri opened the restaurant Saffron Indian Restro & Bar on Hubei Road in Luohu District last year, bringing in three professional chefs from northern India. Now the restaurant menu offers more than 100 dishes.

“We are from north India. There are a few Indian restaurants here that sell good food. My cousin and I love food very much and we’d like to bring the best of northern Indian food to Shenzhen, so that people can enjoy the best of india. So in 2016 we tried to start it,” said Gurpreet Singh Bahri.

The Indian cousins explained that north Indian food has rich ingredients, and thus rich aromas, flavors and tastes. North Indian food is a mixture of mughlai and Afghan cuisine, fine-tuned by centuries of tradition.

“North India has extreme climates — summers are hot, and winters are cold. There is an abundance of fresh seasonal fruits and vegetables. India as a country has had strong Central Asian influences both on its culture and its food,” said Guraman Singh Bahri.

North Indian curries usually have thick, moderately spicy and creamy gravies. The use of dried fruits and nuts is fairly common even in everyday foods. Dairy products like milk, cream, cottage cheese, ghee (clarified butter) and yoghurt play an important role in the cooking of both savory and sweet dishes.

Typical dishes in the restaurant include Peshawari Tandoori Murgh, Lamb Rogan Josh, Stuffed Mirchi Ka Pakora, Paneer Tandoori Pataka, Chapatis and Garlic Naan. Among them, the cousins said Chapatis and Naan are two favorites among the Chinese.

The Peshawari Tandoori Murgha, made with chicken, originated in the Punjab region of northern India. The chicken is baked on skewers or a brazier in a clay oven after being marinated in Indian spices and yogurt. The dish is typically eaten with green coriander and tamarind chutney served with onion rings and lemon. It’s a true BBQ dish for those looking for a healthy protein diet.

Lamb Rogan Josh is one of the main dishes which was originally brought to Kashmir by the Mughals, which was in turn influenced by Persian cuisine. Lamb Rogan Josh consists of braised lamb chunks cooked with a gravy base on browned onions or shallots, yogurt, garlic, ginger and aromatic spices.

The recipe for Stuffed Mirchi Ka Pakora involves mashing a potato into a mixture, slitting green chilies and stuffing them into green peppers, which are then coated with gram flour and fried. People who like chili peppers will love thus dish.

Paneer Tandoori Patakais is an Indian dish made from chunks of Indian cottage cheese marinated in spices and grilled in a tandoor. It is a super favorite of vegetarians who enjoy cheese.

Chapatis is one of the most common forms of whole wheat bread, which is staple food in northern India for its abundance of healthy carbohydrates.
