Meaning:

“开封” is the name of an ancient city in Henan Province in North China, and “菜” means “dish, cuisine.” This term, coined by Chinese netizens, refers to “KFC,” a popular Western fast-food chain, because both the nickname (in pinyin) and real name share the same initial letters. It’s interesting to note that KFC has actually embraced the nickname by marketing a series of Chinese-style takeout food under the brand “kaifengcai.”
