    SHANGHAI does not exactly have a cuisine of its own, but successfully refines the work of surrounding provinces such as Zhejiang and Jiangsu.

    Shanghai dishes are usually characterized by the use of heavy and highly flavored sauce. The use of sugar is another unique feature of Shanghai cuisine. Its traditional dishes include dazhaxie, red-cooked chicken, xiaolongbao (small meat-stuffed bun) and choudoufu (stinky tofu).

    Dazhaxie is a special type of crab found in rivers near Shanghai. The crabs are tied with ropes or strings, placed in bamboo containers, steamed and served.

    Unlike the big buns in northern China, xiaolongbao is bite-sized. The buns are usually steamed in bamboo containers. The skin of the juicy bun is very thin.
