Michelin-starred taste journey

FROM Jan. 17 to 20, the glitzy Michelin-starred chef Michealangelo Mammoliti will be hosting a four-day culinary affair at the Limoni, The Ritz-Carlton, Guangzhou.

Bringing the taste of home from La Madernassa Restaurant in Guarene, Piedmont in Italy, Mammoliti’s dishes vary according to what the nature and seasons have to offer.

The culinary roots of the Italian-born chef can be traced back to his childhood when he used to spend time with his grandparents in their restaurant in Giaveno.

He started his career with a remarkable tutorage at Gualtiero Marchesi (Alberta and Marchesino). Upon moving to France, he joined a three-star chef’s equipe, working for Alain Ducasse, Pierre Gagnaire, Yannick Alléno and The Saint Père sous Vezelay.

Becoming a senior professional chef himself, he forged his own culinary philosophy in which excellence and rigor are his cornerstone beliefs. Mammoliti incorporates many dimensions in his dishes, making his menu a culinary composition rather than a mere meal.

During his time at Limoni, Mammoliti will be showcasing a medley of inspiring delicacies with Italian staples, to the delight of all avid gourmands. In addition, Limoni has also handpicked a variety of vintage wines to create an excellent wine-pairing experience.(Maggie Tang)
