Michelin dinner at The St. Regis Zhuhai

LABREZZA, the Italian restaurant at The St. Regis Zhuhai, has invited René Mathieu, chef de cuisine of the restaurants of Chateau de Bourglinster (awarded with one Michelin star since 1988), to jointly offer an exquisite feast to local diners through Saturday.

Famed for vegetal cooking, Mathieu partners with Michele Tenzone, LaBrezza’s Italian chef, and presents a “Star Hunting Feast Dinner” featuring a variety of vegetables and herbs paired with seafood and meats.

The multi-course dinner starts with several colorful and tasty snacks, for example sweet potato crisps; refreshing kefir made from celery, verbena and apple; and culinary delights from Puglia. Then come the starters, including scallops, Italian ravioli and risotto.

The main courses include the cod fish and the roasted beef, followed by a dessert tantalizing to both the eyes and the taste buds. All dishes see the perfect pairing of vegetables with seafood or meats, which are rich in varieties and colors and are both delicious and healthy.

A gastronome, poet, herbalist and lover of vegetables, Mathieu began his career in 1986 at Le Capucin Gourmand Restaurant in Belgium where he obtained his first Michelin star. Since 2005, he is the executive chef of the restaurants at Chateau de Bourglinster. He was named Chef of the Year in 2010 and received the Gault & Millau 18/20 rating.

Tenzone was born in Bari, a city bathed by the sea of the Puglia region in the southeast of Italy. He cooks with the fundamental principle that the respectful use of high-quality raw materials makes the difference.(Tang Li)
