New heights of Cantonese dining at Raffles Shenzhen

RAFFLES Shenzhen recently welcomed celebrity chef Gordon Guo – an expert in Cantonese cuisine – in its Chinese restaurant Yun Jing.

Guo came from the mountain area in the northern part of Guangdong Province where he grew up, discovered lots of interesting ingredients from nature and got inspired in his “cuisine lab.” For more than 20 years, Guo has always been painstakingly accomplished in the ingredients, taste, artistic conception, and innovation of Cantonese cuisine, and ever striving for new inspirations for Cantonese cuisine. He believes in the taste of the season and is always trying to unlock the unique flavors and create the best fusion.

Two of the chef’s recommended signature dishes are sunflower chicken and roast baby duck with caviar. The chickens are raised cage free in the expansive sunflower garden of Guangzhou, which makes the quality of chicken overtop, and the chef selects the baby ducks from Mixing of Yunnan Province and roasts to crispness through a precise level of heating and smelting, which is then paired with caviar to enrich the flavor and taste.
