    Note: A baker’s dozen, devil’s dozen, long dozen, or long measure is 13, one more than a standard dozen. The practice of baking 13 items for an intended dozen was insurance against the items being lower than the statutory weight, or of lower than usual quality, which could cause the baker to be fined. The phrase goes back to at least 1599. By 1864, Hotten’s Slang Dictionary gives this explicit definition for the phrase: “This consists of 13 or 14; the surplus number, called the inbread, being thrown in for fear of incurring the penalty for short weight.”
